Aunt Sally’s Creamy Pralines
Aunt Sally’s Pralines date back to the 1930s, and were originally delivered around New Orleans by mule-drawn carriages. Their original pralines are the crisp, crunchy kind that Louisiana is known for, while Texas is the home of the chewy variety.
Aunt Sally’s Creamy Pralines are somewhere in the middle. The texture reminds me of British fudge – it’s soft and chewy, but also dry and grainy. The flavor is sweet and lightly caramelized, while the pecan halves taste fresh. Unfortunately, of the three I have eaten, two have had bits of pecan shell in them. It might just have been a badly shelled batch, but it is tough on the teeth.
Their website offers four flavors of creamy praline – original, triple chocolate, cafe au lait and bananas foster. They are rather quick to go stale, so they’re not best to have sitting around for long stretches of time.

Actually, you can get chewy and creamy pralines that aren’t brittle in New Orleans. Aunt Sally’s are good, but they’re the packaged kind, you really need to get the kind that are made fresh to order.
